HUMMUS

Basic 2-step super easy hummus recipe

400g boiled or canned chickpeas (14 oz.)

3 tbsps tahini

juice of 1 large lemon

4 tbsps extra virgin olive oil

2 cloves of garlic, minced

1/2– 1 tsp salt

1/2 tsp ground cumin

2 tbsps water

a pinch of paprika for garnish

BABA GANOUSH

1 medium eggplant*

Sea salt

Olive oil (for roasting)

2-3 Tbsp lemon juice (1 medium lemon yields ~3 Tbsp juice)

1 large clove garlic (grated or finely minced)

2 Tbsp tahini

2 Tbsp fresh cilantro, parsley or basil (optional // chopped)
