NOW WE KNOW THAT The Mediterranean diet is very healthy

Gemista are one of the most classic Greek summer dishes. Below is a traditional version with tomatoes and peppers stuffed with rice and herbs.

Ingredients (serves 4–5)
5 large tomatoes, 4 green peppers. 2 medium potatoes, 1 large onion, finely chopped, 1 cup Carolina or short-grain rice, 1/2 bunch fresh parsley, a little fresh or dried mint, 2 grated zucchini (optional),
1/2 cup olive oil, 1 tablespoon tomato paste, Salt, Pepper, A little sugar, Water
Optional:
Ground meat (300–400 g / 10–14 oz), Pine nuts or raisins
Instructions
1. Prepare the vegetables. Cut the “lids” off the tomatoes and peppers. Carefully scoop out the insides.
Blend or finely chop the tomato flesh.
2. Make the filling
Sauté the onion in a little olive oil.Add the rice and stir well.Add the tomato flesh, tomato paste, herbs, salt, and pepper.Pour in a little water and let it simmer for 5–6 minutes until some of the liquid is absorbed.If using ground meat, sauté it first together with the onion.

It takes only 10 minutes to make and goes perfectly with bread or alongside pasta.
