Senior Taco was a famous food escape artist and had always escaped the grasp of a human. Today he had been captured by Jimmy, a boy who loved his tacos. He had only heard stories but he knew that within this human was a chemical, mechanical, destructive monster called the digestive system.

Senior Taco was crunched, mushed, and destroyed by the mechanical digestive power of Jimmy's mouth. Then the chemical digestion kick in as well, the salivary glands secrete the enzyme amylase. Amylase breaks down starch (complex sugars) into double sugars. Lastly when Senior Taco got broken down into small enough pieces he is swallowed and sent down the esophagus.

As you know amylase is a type of enzyme. Enzymes are proteins that are a major part of the digestive system. An enzyme helps in the process of speeding up chemical reactions by lowering the amount of energy usually needed to complete the reaction. They can either break down or build up molecules (substrate). They are sensitive to temperature, concentration, and pH levels also known as the acidity level.

As Senior Taco falls down the esophagus he falls into the stomach. Once in the stomach he is covered in acid and enzymes called Pepsin, which are secreted from the stomach. Pepsin breaks down proteins. Senior Taco is also getting moved around in the stomach from the ridges of muscle tissue called rugae, that contract or move closer together churning Senior Taco to enhance digestion.
