3. Add the chopped tomatoes, salt, pepper and flakes to fry for another 4 minutes let's mix it up and turn off the stove.
5. Let's put the eggplant that we slice and fry in the baking dish.

How to prepare:
1. Chop the tomatoes and onions to small pieces. Mix the bryndza, tomatoes and onions together.
2. Wash the eggplant and cut it in half. Scoop out the inside of the eggplan twith a spoon.
3. Pour a little bit of oil on the egg plants. Put cut up sausage in it and the bryndza filling. Bake it at 200 °C for about 40 minutes.

PISTO MURCIANO
Ingredients
- 1 Onion
- 2 Eggplant
- 1 Red pepper
- 1 Green pepper
- Tomato
- Olive oil
- Salt
- Sugar

How to prepare
1- The onion will be peeled and cut into pieces and the aubergines and peppers will be cut into cubes of more or less the same size so that they can be prepared at the same time.
2- We will salt the aubergine and cook it in the microwave for about 5 minutes.
3- We heat oil in a frying pan and start sautéing the peppers with the salt.
4- We incorporate the onion. This recipe needs time, over medium heat we will stir and wait for the vegetables to cook slowly.
5- When the onion is ready we put the natural tomato. To correct the acidity we put a little sugar and rectify the salt. We let it cook with the rest of the food for about 15 minutes.
6- It will be time to add the aubergine and stir for another 10 minutes until all the juice has been absorbed.
