This cookbook is dedicated to all the "chefs" that we have learned so much from. Thank you for the wonderful meals, the times spent cooking for us, the times spent cooking with us, and all the memories made.

Nick Brannan:
"Me and my mom were trying to think of something to eat one day so she went through her mom's cook book and found her mom's meatloaf recipe. She decided that was what she would make so she went in the kitchen and started cooking the meatloaf. About half way through, she called me in there and asked me to make mac-n-cheese. Now every time my friend Andrew comes over, that is what he wants to eat."

Lezly Coleman- "Every year on Thanksgiving, my step mom makes her enchiladas. It all started whenever my step mom went to the store and she thought about making something new. She had her son to look up recipes and he saw a recipe for enchiladas. She got the stuff it called for and added a little bit extra. When she made it the first time, it was a little bit off. Then she made it the next year and she figured out what she had done wrong. She put milk in it."

Enchiladas
Ingredients:
1 lb. ground beef
1 jar (16 oz.) salsa, divided
1-1/4 cups Shredded Cheddar Cheese, divided
1/4 cup chopped fresh cilantro
10 flour tortilla s (8 inch)
Directions:
Heat oven to 350°F. Cook beef in large nonstick skillet until done. Stir in 1/2 cup salsa, 2/3 cup cheese and cilantro. Remove from heat. Spread 1 cup salsa onto bottom of 13x9-inch baking dish. Spoon 1/4 cup beef mixture down center of each tortilla; roll up. Place, seam-sides down, in baking dish; top with remaining salsa and cheese. Bake 20 min. or until heated through.
Derek Duffel: "One time I was over at Andrew's house and we were hungry so we cooked eggs. Andrew and I cooked them different ways, but we both liked each other's. Now, we make eggs almost every time we get hungry, but we switch cooking. One time I'll cook the eggs and then the next time he cooks them. The only time we got in trouble was when Andrew used an iron skillet to make the eggs and the eggs got stuck to the pan."

Scrambled Eggs
My Recipe :
3 eggs for one serving
Crack them and mix them up in a bowl. Pour into a heated skillet and scramble them until fluffy. Add salt and pepper if needed.
Andrew's Recipe:
Crack 6 eggs and whisk with one cup of milk. Pour egg mixture into a heated skillet and cook until fluffy.
Popcorn Cake
8 c. popped popcorn Sm. pkg. miniature
8 1/8 oz. plain M & M's marshmallows
6 oz. peanuts 1 stick butter or margarine
Pop one bag of popcorn. Shake bag well to make sure any unpopped corn goes to the bottom of the bag and is not in your cake. Melt butter; add marshmallows and melt. Mix popcorn, peanuts and M &M's into marshmallow mixture. Press into a tube pan that has been sprayed with Pam. Let set up in refrigerator, then remove pan. I use different candies in the bottom of my tube pan to dress up the cake for different holidays. Candy corn for Halloween, red and green for Christmas, etc.

Kaynan Compton: One time, when my grandmother was making her popcorn cake for a girl's night at her church, she messed up pretty bad. She was in the middle of putting in all of the ingredients when she forgot how many marshmallows she had put into her popcorn cake. She decided to just put in the rest of the marshmallows and go on. This might not have been her best decision. Turns out she had put in way too many marshmallows and now her popcorn cake could be mistaken for soup. It was way too sticky and not edible in any way. She decided that there was no way to save it and she had to just go with nothing.
2/3 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon ground cinnamon
5 to 5 1/2 cups sliced peeled fresh peaches (5 to 6 medium)
1 teaspoon lemon juice
1 package (12 oz) Pillsbury Pet-Ritz® frozen deep dish pie crusts

Peach Pie
Place cookie sheet on oven rack. Heat oven to 400°F. In large bowl, mix sugar, flour and cinnamon. Stir in peaches and lemon juice. Spoon into frozen crust. While second crust is still in pan and frozen, remove crimp with sharp knife. Remove crust from pan and center frozen crust upside down on top of filled pie. Let thaw 10 minutes; crimp edges together. Cut 2 or 3 slits in top crust. Cover edge of crust with pie shield or foil strips. Bake on cookie sheet about 45 minutes or until crust is golden brown and juice is thick and bubbly. Cover entire top of pie loosely with foil if crust is getting too brown. Cool on cooling rack at least 2 hours.
Hannah Harrison-
"Once my mom was making a peach pie for Thanksgiving. While she was making it, she forgot one vital ingredient. Sugar. When the pie was finished, she took it out of the oven and it was the most beautiful pie ever. It was like a pie on a cooking show or a commercial. When she cut a slice and ate it, the pie wasn't too bad, but it was very bitter. She realized she forgot the sugar, but it was still good if you sprinkled some powdered sugar on it. Luckily, the pie was salvageable or else it would've been a waste. Everyone thought it was funny how the pie was beautiful but tasted very bitter."
Skyla Hill:
"One day I was told to make dinner. I finished the other food so I started on mashed potatoes. I got my ingredients out and started to work on them. My recipe calls for salt and when I went to add it in, I put (2 cups) of salt in my mashed potatoes. There was only supposed to be 2 teaspoons! Not knowing my mistake right then, I made plates and gave them to my family. They took a bite of potatoes and spit it out immediately and started to gag. I was told that I couldn't make mashed potatoes anymore.

Mashed Potatoes
8 to 10 medium russet potatoes (about 3 lb.), peeled, cut into quarters
2 teaspoons salt
2 tablespoons of butter, if desired dash of pepper
1/4 cup of hot milk
Peel potatoes. Boil them in water until soft and then drain. Put them in a bowl and mash them up. Add your salt , pepper, butter, and milk and then you have mashed potatoes.
Emma Limon:

"It was my baby cousin's birthday. He was going to be three and my Aunt Carman made him a birthday cake. It was a PJ Masks cake (at the time he liked the show.) When it was time for cake, everyone just LOVED it because my aunt makes her cakes a little differently. It was spectacular! That day, I had about 4 big pieces of cake because it was that good. I decided to tell you about the way she makes her wonderful cake so you can make a wonderful cake like her."

Josie Simmons: "So when it's close to Christmas time, my mom drives me and my sister to Hays Food Store to get the stuff for peanut butter fudge because she makes it every year for Christmas. To be honest, my mom doesn't do anything but put vanilla icing over the peanut butter and mixes it. She then puts aluminum foil over it and puts it in the refrigerator until Christmas Day. Many people make peanut butter fudge different ways."

When I would stay the night, I'd wake up the next morning and I would smell something really good. My Grand Grand would say, "Get up." After I would get up, he'd say, "Here, take this." I would take it and see the french toast and I would eat it all up. My Grand Grand or grandpa still does this to this day.
